Crockpot Lentil Soup!
In the crockpot add:
– 1 onion
– 3/4 cup yellow split peas
– 1 cup green lentils
– 2 cups chopped potato
– 2 cups carrots
– 5 garlic cloves
– 8 cups chicken broth
– 2 cups celery
At the end add:
– 2 cups kale
– 1 cup parsley
– 1/2 cup extra virgin olive oil
Instructions:
1) Add ingredients, cover & cook on high for 5 hours.
2) Take 4 cups of the soup and place it in a blender with 1/2 cup olive oil. Pulse until semi-smooth.
3)Add it back into the pot and add the kale and parsley.
Makes 8 servings!
